Since just a wee pup my favourite sandwich cold cut has been brawn - headcheese - souse.....more often than not grocery store zeigler brand. But after a serious bout of listeria I shy away from unwarmed cold cuts. Well you cannot exactly warm headcheese as it melts into an unappetizing goo when the gelatin unsets.
So I take a 2 oz. slice of zeigler brand souse and melt it by zapping in microwave. Stir in 1/4 oz. quick rolled oats and a like amount of corn meal. Add a splash of water as necessary to somewhat hydrate the oats and meal. Roll into balls and drop into hot oil or flatten balls into patties and pan-fry.

Never tried that, but it looks tasty.
A favorite snack while hunting with my Grandpaw and great uncle was a slice of hoghead cheese on a saltine cracker with a splash of tabasco sauce....

As a youngster I watched in awe as our Reverend dismantled a couple hog heads after boiling. He then ground all of it very fine and made scrapple. It was a day long process in the church kitchen.

This morning's experiment along this line actually started with a bowl of grits with a slice of souse melted into it.
And of course, the confounded auto correct kept trying to change "souse" to "spouse".....
