I have a bunch (3 pounds or so) of Jalapeno peppers from my garden this year.
I have halved and seeded them and looking for a good recipe for a salsa I can
use over my scrambled eggs in the morning. I eat at a mexican mom and pop cafe
downtown sometimes and eat their salsa and it is great. It looks to be just
chopped up jalapeno peppers (seeds and all) and maybe some onions too. Could it be that simple? I have a vague memory
of a recipe with vinegar and salt but don't remember a vinegar taste with the downtown salsa.
The peppers are in the freezer now firming up to be vacuum (Foodsaver) packed.
Anyone have some simple recipes that doesn't involve canning?

Jalepenos are like garlic, the longer you cook em the milder they become:
Slice peppers 1/16 - 1/8 inch thick and place in hot pan with a little olive oil and stir, salt to taste.
If pan is too hot olive oil will smoke - pan too hot.
The heat is mostly in the pith, if you cook em till they start to brown, very tasty, I eat em every day.
Warning: Cook in ventilated area, the odor CAN occasionally get you...

Do not leave out the cilantro, it really enhances the flavor.
