Green with envy. I've got an elk loin steak ready for lunch today, but Nancy saw the pix of Joe cleaning that first elk (the messy one that exploded on him) and was not ready to eat any with that visual stuck in her head. Nancy is out of town this week, so I'll be dining on elk meat all week.
Kind regards,
Tycer

Breaded Goose Scallopine.
Thinly sliced, pounded w/ a mallet, needled w/ a Jaccardizer, seasoned w/ copious amounts of Paul Prudhomme's "Poultry Magic" seasoning, breaded & sautee'd and served with W/W fettuccine and buttered/parslied baby carrots and homemade applesauce studded with cranberries!
So much for roasting the goose on a cedar plank then throwing out the goose and eating the wood!
Wait, maybe I should be posting this on Shotgunworld.com?!
Ciao!

It sounds like alot of us are eating pretty good. Billy Boy that sounds good, I never found a way to cook goose and say it was good. But I haven't tried to many ways.

Tycer, sorry to hear that Nancy doesn't want to try your elk, Becky would have reacted the same way. She has never really liked any kind of wild game so I tried hard to make it tasty. I used some of the backstrap in hopes of insuring that she would like it.

Aloha Rick, I hope you washed it down with some ice cold SHINER BOCK. My son cooked us up a big pot of chili using some Texas chili powder I picked up in Hondo, much better than the McCormick stuff from Costco, only thing is it was turkey chili not Black Buck chili but he can't wait to make a pot of Black Buck chili real soon.

Hey Tycer, Shaka Braddah! Mahalo for the Lil'Gun.
