OT: Black eye peas

Bought a pound of Fried Okra to munch on while driving thru the storm in Iowa and Illinois. Got to thinking about other foods i havent had in awhle. 2nd thing that came to mind was i havent made Black-eyed peas and ham. Stopped at store and bought bag of peas, smoked hamhocks and 2lbs of real ham. Put it in the crock last nite, this morning woke up to a bowl of it while reading the forumn. Now after the 3rd bowl hpe can leave the rest of it for a day or 2 so it can season. :)
30/30 Winchester: Not accurate enough fer varmints, barely adequate for small deer; BUT In a 10" to 14" barrelled pistol; is good for moose/elk to 200 yards; ground squirrels to 300 metres

250 Savage... its what the 223 wishes it could be...!

I hope you've got a lap-top because it appears to me that after eating 3-bowls of beans this AM, you will be on the can this PM while reading the forum. :)

Yep, ya can't beat beans and ham along with cornbread and greens of course.

Don't eat garbanzo beans raw - they will go right through you in about 20 minutes. :lol:

Got my mouth to waterin' too now! I guess now I'll have to have blackeyed peas and cornbread with "pot likker" for spper. I'll add some chopped onion and a spoon of sugar to mine.

Hey, I know it might sound funny , but don't knock it till you've tried it! :wink: Seriously, my grandmother taught me that trick, since verified by many other southern cooks. The idea is not to make a sweet concoction, but to mellow out the flavor and take any bitter edge off. Simply add a teaspoon to a tablespoon to the pot (depending on amount being cooked) to peas or beans. If you don't go haywire and add too much sugar, you won't taste it. Try it sometime! :)

A lot of southern cooks put sugar in all kinds of things. Some even put sugar in biscuits.

Sounds like a good Up North round the campfire gag to pull on somene.

As a boy I both picked and chopped cotton along the river that made Elvis say, " darn I got to find an easier job". I know why the Southern women put sugar in anything they could. The answer is simple, when pulling a 75 pound bag of cotton at your side while all stooped over it just helps.

It also helps if you get an R..uh..c..co..cola and a moonpie at about 9am.

Blackeyed peas and ham with cornbread! Mmmm...good!
My mom made that a lot when I was younger.
My Dad's family was from Missouri so we got to eat pretty good stuff.

My wife is from the Netherlands, via Canada.
All Canadians apparently HATE blackeyed peas, so I only get them once a year.
Better than never, I guess.

BTW, Dutch cooking is just plain awful, kill ya fur shure.

Slim,

I understand the idea of cutting the bitter taste - but what bitter taste? :lol:

For some unknown reason, there are alot of Florida cookers who are now putting sugar in things that I have never seen before. One is the trend to put sugar or milk in Swamp Cabbage. That is just not right. If it is bitter, it was cut up wrong.

Sugar in swamp cabbage? That's a hangin offense. a Little bacon and no salt.


I'll always remember a buddy of mine tellin me about going through the chow line at Ft. Bragg. Some kid from New York City got a big serving of grits and put sugar on them. He took a bit and said BLAH! what IS THAT? A big D.I. was standing nearby and said boyah, them thar's grits.

If you get a little too much salt in something adding a little sugar will help conceal the excess saltiness.
