It's getting near Christmas Guys - time to revisit the "Pay it Forward"

A while ago on the "pay it forward" thread I got a "Canadian Belt Knife" from 44/40 - looked like it would be a good Butchering tool. Oh Boy was I Right.

Where I used to use a bunch of knives, I'm down to just 2 now.

The Victorionox is super flexible & sharp - great for boning, and the Ulu-ish blade of the Cold Steel Canadian makes quick and handy work of non-tip slicing/fleshing.

You could do a lot worse than these two knives.

What do youse guys use?

Funny, I use the same gerber axe. It is kept with a razor sharp edge and I feel I could go start to finish with it but I don't. I would hate to have to use it for camp chores.

I use a thin head small hatchet made with surgical steel. A Buck "Skinner" and a good old fashioned butchers knife.
That which does not kill me has made a grave tactical error.

I use a geber hatchet and a frosts of sweden knife as I quarter my deer and elk to pack them out on stock most of my heavy work is done in the field . I keep my knives and hatchets shaving sharpe with a DMT 2 grit diamond folder. danny

We have a drawer full of those Victorinox knives only ours have serrated blades. I bought my wife one years ago when I found it for sale at a gun show. Then several years after that we were at Smokey Mountain Knife works and she saw then for sale there. She bought a dozen of them. She gave a bunch of them away to her sisters and friends but we still have 6 or 8 of them ourselves. They sure are great little knives.

Hey, great post! I was looking on the Victorinox website trying to figure out which knife that is. Of course they have hundreds of models. Any idea what model group that belongs to? I used a buddy's Gerber hatchet last year to quarter a deer; worked great. We did manage to chip the blade cutting through the leg bones. You really could do the whole job with it if you had to, from field dressing to final cuts.

I use a Benchmade Mini Griptilian. And a sawzall.

For field dressing either a Buck Alpha Hunter or a Kershaw Echo.

For butchering I use a Chicago Cutlery 8" boning knife. Nothing special about it. It's in the kitchen, it's kept sharp and it works.
