How Many Recipies Do You Have For Eggs?

Post by JimT »

Our chickens are producing .. this is 5 or 6 days worth. I figured if the family will each eat 6 to 7 eggs a day we can stay ahead of the chickens laying them!

There was an annoying, impertinent fellow who was forever inviting hisself over at mealtimes. Then came the dinner that we had been looking forward to for some time....beef tongue debris po'boy sammies !

As sure as death and taxes we heard his tread on the porch, the doorbell ring and the familiar throat clearing "ahem". He knew we was to home so we could not not answer the door. His nostrils flared and his upper lip curled as he caught a waft of caramelized onions from the galley. Yes something indeed does smell good but when we informed that it was beef tongue he opined.....

" I won't eat anything that comes out of an animals mouth.....just boil me a half-dozen eggs !"

That's not a bad problem to have Jim. In answer to the thread title - omelettes, scrambled, fried, soy, toad-in-the-hole, poached, hard boiled, quiche...8 I guess.

Egg pancakes...
4 eggs
cup of flour
cup and a half of milk
mix the above together with an eggbeater, salt to taste
heat up a skillet and grease with bacon grease, or use whatever oil you prefer (I'd go with butter)
pour about a half cup of mix into said skillet
spread around and cook until bottom looks about like a pancake
flip and continue cooking
pull out and place on a large enough plate
butter and add any condiments you like then role it up with a fork, I like maple syrup or honey. Feeds about 2 to 4 people depending on appetite. YMMV 8)

Yea, I know it's a lot like crepes, but I've grown up calling it egg pancakes!

I eat a lot of scrambled omelettes. Saute onion, peppers, tomato, spinach, meat of choice. Throw in 3 eggs, stir it all together. Flip when ready and add cheese on top.

Probably too many to count. But my favorite is fried in bacon grease. Done right after the bacons done frying. Or if you’re having eggs and no bacon just take a couple of tablespoons full of left over grease from the coffee can and cook in that.

Fry up some bacon or sausage until almost done, add sliced potatoes and cook until done. Add eggs and stir until eggs are cooked. Campfire casserole...

They can be stored for a year or more in lime water.

These are from 17 hens. We get between 12 and 14 a day. Some days a couple more.

Eggs without bacon???? Well, I guess I could have sausage, ham or a steak with them. :D

Real men don't eat quiche!

3 eggs done whichever way you like them.
WITH:
Half a pound of bacon.
Or 4 large brats.
Or 6 to 8 pieces of sausage.
Or a nice steak.
Or some good hunks of ham.
Or a half pound of ground beef... or ground buffalo .. or ground venison... or ground pork.. or ground elk ... or ..

That's breakfast after you have been up for 3 hours feeding and watering the critters, checking the fences and cleaning stalls.

I beg to differ, real men eat pie, and what is quiche but an egg pie? My personal favorite is Florentine - bacon, tomato, spinach and feta. I actually only started eating it in the last few years after the wife brought one home and I discovered that they are in fact, awesome, but go ahead and be a culinary philistine, ya curmudgeon... :D

The last time I asked the waitress for a quiche, she slapped me. Someone at the next booth told me it is pronounced like keesh. I didn't know.

Pickle some of the extras. All the old time stores used to have a jar of them on the counter. Man they were good!
