I don't know what "Burgoo" or "Souse" is. So I may have eaten them without knowing.
But I've eaten everything else on this list.

4 and only chicken and dumplings have been eaten more than once......the others ....corn bread, frog legs and squirrel were only taste sampled. Corn bread?---I prefer Wonder.
I must have shot 200 squirrels and my grandfather would eat them...the sight of them made me puke and the frog legs was from my Boy Scout days.

Souse is Hog Head Cheese. The Oldtimers would boil a hog's head, pull the meat off the bones and add spices, red & black pepper and green onions and make a gelatinous block.
Sliced thin and eaten on saltine crackers. Good!
i don't know about Burgoo....looks like a thin gumbo without the roux.
I had two big fried baloney samdwiches for dinner one day last week.
I didn't see Cat Head Biscuits on that list. No Fried Deer Meat and Collard Greens?

Call it what ever You want......My Grandparents were starveling in the 30's and if it ran , crawl, swam , or could be be caught it was food....They could make it taste like lobster.......or chicken...................snapping turtles were on the menu often......even if they had 50 years of toxic metals in them,............

Rock steady that cheese sounds like scrapple, Dad used to fry us up a big slice with breakfast. G Grandpa ate raw softshell turtle eggs with coffee. The softshell turtle is a great delicacy in my opinion. Armadillo is decent eating if you are out of ammo, they are easy to sneak up on and a young man can run one down.

Say it isn't SO! You've never had 'dillo - AKA possum on the half shell? Even better if made with coconut milk or fried up into a good farofada. Then there's manisoba, tacacá and a host of other Amazon river basin delights. I've heard of souse, but it was those Yankees up in Pennsylvania that were making it, I thought. Never thought of it as southern.
Poor man's food is the best. Then the rich folks grab onto it and make it fancy and poor folk can't afford it any more. Ribs, for example. Chicken wings. Those used to be bits no one would want, now one can't hardly afford them.

Since when is cornbread, fried bologna, fried squirrel, and chicken fried steak "Southern"?
Some of the others I've tried. Most I have never heard of.
My dietary rules are: No bugs; No slugs; No guts; No chicken.
No crabs, shrimp, crawdads, or any other creepy-crawly insect.
No sulgs, snails, squid, or any other slimy cephalopod or gastropod.
No liver, brain, kidney, sweet breads or any internal organs.
No chicken, chicken broth, chicken stock or anything that tastes or smells of the nasty bird.
I stick to the four food groups: beef; beef; beef; and bacon.
Some of the others I've tried. Most I have never heard of.

35! I really like gizzards, they are served in the convenience store delis around here but I don't care for chicken livers, I've eaten them but I prefer gizzards. Souse or head cheese as we call it is really good stuff and my Daddy always wanted me to not head shoot squirrels as he liked the brains. I still remember that squirrel tongue tastes like hickory nut goodies. Oh, and woodpecker tastes like a pine knot.

24. I've eaten rabbit and squirrel multiple times. just not the way they listed. I eat them browned and simmered in flour gravy. I thought everyone ate cornbread or hush puppies

I have eaten 19 of the items on the list. More if you actually count the things I have eaten once by accident and had an allergic reaction to. Most Cajun food is dangerous to me. I am allergic to bell pepper. Jambalaya makes my tongue swell up like a balloon. Mud bugs are good if cleaned right. Red beans and rice is tremendously better if you use jalapeño instead of bell pepper. Cornbread needs jalapeño in it. Cover it with pinto beans and dig in.

Having lived in ROK, and Panama....there were things I had that were mostly good, but sounded horrible.

I like fried deer heart on a limited basis as well as escargot . But I never tried deer heart until I was on a hunting trip in Maine .

In the summer if I’ve got nice big knarly pink beefeater tomatoes I’ll make Tomatoe sandwiches just mayo salt and slab of tomato served with a big glass of milk and a couple pieces of cheese on the side . Usually takes three sandwiches and a quart of milk per sitting .

I think I got 5 or so! Some of it was on a dare!
We eat chicken and dumplings and corn bread throughout the winter.
When I lived inland Pa. for a few year they look at me like I was crazy
when a few of my Long Island buddy came down.
We ate raw clams and oysters all day with lot's of beer!
500 clams and 150 oysters in a afternoon.
We eat chicken and dumplings and corn bread throughout the winter.

Those shellfish clams and oysters look to me like what you hack up in the mornings during mountain cedar season. No thanks!
Crawfish, or crawdads as some call them, are good when cooked right. I have caught some out of lakes that were 5 to 6 inches long.
Chicken and dumplings are comfort food. When it is cold outside, it is a warm meal that lifts your spirits.
I have never tried fried green tomatoes.
I don't eat tomato sandwiches without bacon and lettuce. No mayo. I throw that nasty stuff in the sinko. I can sinko de mayo anytime.

How'd they make them? Just curious as Grandma was a farmer's wife and would mash them first, then make them into patties and fry them. She grew up in the Ozarks, no telling where they picked up the habit. What's a tea cake?
