A mdl 12 Winchester.

Could live with the .444. Would prefer a .357 over the BEE. Any way, you are correct. Think we all have way too many guns, but, it's part of the addiction
With these two, you could hunt anything in the U.S. (or world, with proper bullets and shot placement) easily if you were a good stalker. For the farther-out stuff I'd add a 375 Ruger, (or the slightly-inferior 375 H&H ) and for birds a shotgun (a Saiga would double as a home defense item).
Handgun-wise, toss in a Redhawk 45 Colt/ACP, and a Ruger Mk-III/45 with a can, and that's six firearms to meet all needs...

I like that list a lot!
Going with what I have I'd substitute your '85s with my
1886 33WCF and my Colt Gold Cup for the Tommy gun though I'd love to
go the SBR route for a real Thompson.

22 LR pistol. Browning Buckmark
308 Win. BLR
12 gauge. Winchester Model 12 or my Baretta sxs is OK
I could easily get by with this setup.
The question was "What ELSE..." I ain't givin' nuttin' up to get what's on my "NEED" list!

I'm glad this is just a game.
But, menfolk used to get by with a .22 and a shotgun of some sort. But, I'm not like that. I like having several in the safe even if I don't shoot much anymore. "Just" two wouldn't cover my three go-to EDC mouse guns....

I often hear the phrase "beware the man with one gun" in my head. I like Docs two rifles a lot. I've been down to 3 guns at one point. 300 mag, ar15 and a 1911. I think I could do the same again except a 9mm glock instead of the 1911. I've never had much use for a shotgun but I keep them around.

Don't forget Rock Island makes a 9mm double-stack 1911 (with optional 22 TCM barrel)...

Bestlever was loading 130 grain pointy bullets in his 30WCF AI....Called it a 250 yard, two shot, wonder. I can't exactly remember, but it seemed he was pushing 2800 fps.....

I don't "need" anything else or a good portion of what I have !
But I want all I have and I "want" to get a Parker EH or NH 10 gauge with barrels 24 , 26 or 28 inches that are uncut factory original . I also "want" a Parker VH 28 gauge on a 00 frame with factory original uncut barrels .
Parkers , Mannlicher Schoenauer’s , 6.5mm's and my family in the Philippines !
