FOOD - So You Like Beans Huh! - TrÃos Frijoles Chili
TrÃos Frijoles Chili
This recipe is mildly spicy and of course, the flavor will improve overnight. It will serve 8 – 12. It freezes well.
Ingredients
2 lbs ground Venison (or ground beef*)
1 Medium yellow onion - finally chopped
1 Medium bell pepper (green, red, or yellow) - finally chopped
2 Cloves of garlic – crushed or chopped
2 Tablespoons of Olive oil
1 14.5oz can of diced tomatoes
1 6oz can of tomato paste
2 teaspoons of dried crushed Pequin chili or 3 teaspoons other chili powder.
2 teaspoons salt
½ teaspoon of ground black pepper
½ teaspoon of cumin
¼ teaspoon of cinnamon
2 14 – 16oz cans of Pinto beans
2 14-16oz cans of Kidney beans
2 14-16oz cans of Black beans
Optional Ingredients
Shredded cheddar cheese for garnish
Sour cream for garnish
Corn bread on the side
To prepare;
Prepare dry ingredients first; in a cup, mix chili powder, salt, black pepper, cumin and cinnamon. Set aside.
In a skillet or Dutch oven warm olive oil then add onion and garlic. Cook over low heat until the onions are translucent (semi clear). Add ground venison and dry ingredients, then brown meat.
*If you are using ground beef, you should drain the fat off at this point.
Add tomatoes and tomato paste, stir well.
Add beans, one can of each, stir well then add the other three cans. Stir well, and then bring to a boil. Once boiled, reduce flame and simmer for ten minutes. Add bell pepper and simmer 10 minutes more.
You can serve it with corn bread and garnish with shredded cheddar and/or sour cream. Mmmmmm.[/b]

I love Chili but my wife and I go round and round about them tomatoes all the time. I say it should get the red color entirely from the chili powder and besides cooked tomatoes tear my stomach up. It's all the acid I guess.
I don't like spaghetti sauce either.
She has found a recipe for white chili that I really like. I'll see if I can get that out of her.

Since I retired, I'm expected to pull my weight around here a lot more, especially in the kitchen. The wife still has a year to work. I appreciate this big recipe with all those 3 kinds of beans. Sounds like man food, and my kind of grub. Hate to hear about Rusty's problem with tomatos, getting ready soon to set out about 60 plants in the garden. Thanks
