Black eyed peas
Not necessarily my legume of choice but I just happened to spot a bag in the back of the cabinet last night.
Soaked overnight, then rinsed couple times to reduce the...windy...anti-social aftereffects...
Threw 'em in the pot with two (goin' for the gusto!) smoked ham hocks, chopped up half an onion, spoonful chopped garlic and a quart of chicken stock. (not broth)
Wanted to throw in some finely chopped celery as another aromatic, but alas, none in the veggie tray.
Added water to the pot to follow the one-knuckle rule, figure in two hours I'll check 'em again.
Being a smaller bean and with the pre-soak they'll probably be done, or very close to it.
Will make some skillet cornbread, might be some other goodies in the fridge, but if not, I'm still good.

Ding! Ding! Ding! We have a winner, although no prize, just braggin' rights.
Just checked on them, two hours on, they were soft and done a good time ago. Got the lid off so the liquid will reduce.
Will have to check the ham hocks, sometimes they're meaty, sometimes not.
Beans 'n cornbread for now. I may do some rice for dinner tomorrow.

Wife mentioned since I was on a roll, should post the 'proper' way to do cornbread...
(this will get some of y'all going!)
Summer time, hate to run the oven too much. So, non-stick skillet on the stove. Warm to just a bit past 'low'.
Cornbread mix. One egg, beaten. Splash of oil, I use canola. About one cup milk. Cup of Martha White's self-rising cornmeal.
Mix out the lumps. You may have to adjust the milk/cornmeal ratio, you want it to be flowing, but not liquid.
Don't be too serious, you're just making cornmeal pancakes.
Pour in skillet till they're about two inches or so across - I usually get four in a twelve inch pan.
Couple minutes on each side. One side gets golden brown, flip 'em over.
If you screw up, that's what the dog is for.
First batch of four, have the butter ready so you can do a quality control check on one of them. (grin)
(this will get some of y'all going!)

Yum Yum! My favorite is Purple Hulled Crowders. We used to can them in quarts.

that's good info there. I'll try the corncakes.
leftovers tonight came from the crockpot: a bunch of mex whistle peas, they're smaller than the u.s. variety, and have rocks mixed in. remove the rocks. when boiling add in brazed salt pork and fat. 6 hours in add in a kilo of lentils.
that's it. season to taste when you fill up your bowl. very tasty and the pork made the lentils ok. and the long cook made the beans just right.
that salt pork looked better than any bacon I could find, and the shanks looked skankey. I bet I'll be using salt pork again.

Sounds dee-licious.
I wish I had a dependable source for meaty smoke hamhocks with good flavor. I have had some that were almost rank.
