Yes thanks, good stuff! I'm fairly certain, 99% anyways, he's the same guy whose video i watched, idk? 7-8 years ago, when I was looking how to make a true chuck wagon beef stew, but for me primarily, venison stew. Because when I process my own deer, I wind up with lotta really good stew meat, same meat most leave for big roast. But I just don't fix a roast but once in blue moon. But nothing I like better than Stews, Soups, or Caseroles!
But anyways I found what I wanted exactly from him! A stew made to eat like a meal, big chunks meat and vegetables, no water, only tomato sauces, paste, broth, and plenty herbs and spices! But I worked on it, and I'm not really cook, but knew what I wanted , and by few tries? I have company and neighbors waiting often!
But that guy's a real resource!

Bill, I share your sentiments about Lincoln, both the village and the county. I lived in Fort Stanton from 1959 till 1966, went to school in Capitan and always enjoyed spending time in Lincoln. My father was a TB doctor at Fort Stanton until the time the hospital was moved to Fort Bayard where we lived for several years. A friend and I ride our motorcycles down to Lincoln at least annually. It's a fascinating place.
