Change of plans !

I had a deer heart all salt soaked and sliced up to take to the shop for lunch today . But I got a phone call saying the young guy that works there had I think a stomach virus and the guy that owns it had a cold , so I opted to stay home (not a very difficult decision lols ) . So tonight for dinner I started off by boiling six or seven boiled potatoes for mashed taters . Put together a pot of mixed veggies corn , green beans , Lima beans , carrots , diced tomatoes , chicken broth a little seasoning and a good dab of hot sauce . Then I beat three eggs in a bowl , had another bowl with seasoned flour and starting dipping the sliced heart in eggs and dredging it in the flour . To cook it all I had to do two batches . I’d let the heart cook a bit then add diced onions green peppers and banana peppers . After I was finished with the heart I took what was left of the eggs and flour mixed them together and made a pancake of sorts . I gotta say I was okay with fried heart before but since adding green peppers onions and banana peppers it’s worlds better .

Sounds good!
A friends mother used to make deer heart stuffed with Chestnut stuffing then smothered in sauteed onions with clarified butter and brandy. Sadly she is gone and I never got the recipe.

I never even considered eating the heart until I went hunting in Maine for deer maybe twenty years ago . The guy who was putting us up had his wife cook hearts out of two deer that were killed the first day . Sliced then dipped in eggs and dredged in flour and apprehensively I tried it and was totally surprised . And ever since then I try and keep 2-4 hearts each season . While in Maine they also took the deer liver and cooked that . She even used some of the liver in mincemeat pie , but I stayed away from both I’ve never been a fan of any liver .

No liver for me either.
The liver is a filter, any and all contaminates end up in the liver.
Another buddies dad would eat deer brains, fried up with eggs.
I guess those from the old country made use of every bit of edible they could.

My pop liked fish roe mixed in with scrambled eggs , I couldn’t go that either .

Not deer, but grownup on dairies, I we ate heart, liver, kidneys and tongue. Scrambled eggs and brains was a treat for breakfast.

Most of these came from bull calves. To a dairy farmer bull calves weren't worth near as much as a cow calf so they were slaughtered young. By the way, real veal is a calf slaughtered before it is weaned. Not from some yearling raised in a restrictive pen and fed some gawd awful concoction.

Even as an adult you could still get brains until mad cow showed up.

My great grandmother told me when they killed a hog they ate everything from his rooter to his tooter except for the squeal !

Even hides brought in a few dollars. Depending on the species the hides price varied.
