Partridge Stir Fry with additions !

I started with the breasts from six partridge cut in cubes braised in the frying pan . Added the usual peppers onions snow peas and broccoli , but also added carrots and water chestnuts . Also this time I used old plain Jane Kikkoman Stir Fry sauce . Not bad if I say so myself ! Honestly I prefer this with the pen raised partridge over the pen raised pheasant .

Looks great 6-pt. When you say partridge are you talking Chukar, Hungarian, Red-legged or some other bird?

They’re pen raised birds that the guy that puts on the shoot says they’re “red legged” look same as a chukar to me :wink:

Cool. I rank chukar up there with quail and ahead of pheasant and grouse as the best tasting upland birds.

I think ruffed grouse are as good if not better than quail . But partridge have a nicer flavor than pheasants for sure .

FWIW my friend that puts on the tower shoots where I shoot the partridge and pheasants purchases his birds usually from a game farm in PA and those folks claim to have chukars and red legs . Alone they look pretty much the same but I’m color blind , but side by side I notice a little difference in color .

The Oregon Department of Fish and Wildlife -- encouraged by their success introducing chukars in eastern Oregon -- tried to get Red-legged partridges from India to take hold, but they never did.
Not many know the Chinese ring-necked pheasant was first introduced successfully in the Willamette Valley in 1881 by Judge O.N. Denny, who had been a U.S. consul to China and developed a fondness for pheasant meat.

I know not if the redleg of India are the same as the redleg of Spain/ Portugal . The ones at the tower shoots I attend are supposed to be the same strain as the european ones . As a matter of fact I was on the phone today with the fellow that puts on the tower shoots I attend and he was complaining about the cost increase for pheasants and partridge this season .

6pt, you are right -- the red-legged is from Iberia. It's the chukar that is from India. They have a bunch more, too:
Alphabetical list of Indian partridges

Mountain bamboo partridge (Bambusicola fytchii)

Only partridge I’ve ever shot were pen raised birds what were supposed to be Red Legged in WVA and what were supposed to be chukars in VA . When I went to MT in 91 I was told I saw some wild not pen raised Hunns but again I’m color blind and that’s what the guy we were hunting with said they were so I’ll defer to what he said .
