I think #4 Buck seems good - haven't actually used any, but pellets big enough to go through 'stuff', but more numerous. Shot a round through a steel residential door panel (scrap) just to see and it made a inch and a half diameter hole...

I don't know... is killin' a Harley-Davidson harder than a car? I so, and you're set on usin' a shotgun, I think you better have some of that 3" magnum stuff w/steel shot!

"Best" is open to interpretation. Since either my wife or I may need to use the shotgun, my choice is my old 20ga Franchi Model 48. One of the barrels was cut down to 18.5 inches decades ago. Using #4 buck 2 3/4" loads is well within my wife's comfort range, and I'm pretty sure any intruder hit with one or two loads would be able to think of many better places to be.
