Pulled puerco for the Fourth
Dunno about you guys, but I like to celebrate our nation's birthday with food, and especially with barbecue.
I've had some good luck with smoked pork butts using various rubs and injections, but I have become a fan of Austin's quirky BBQ chef Aaron Franklin, and I am going to use his recipe for Texas-style pork butt. I'll be making the buns from scratch, and the pulled pork sammiches will be served with sides of cole slaw, mustard/dill tater salad, corn on the cob and cold beverages. Sounds like a meal to me!

My better half is always working the grill, right where a woman ought to be.
I'll be terrorizing the neighborhood with the 3" mortar. Got me a sizable amount of cement filled cans all good-to-go.---6

My son and his kids will be here for a couple of days so we'll be doing a lot of cooking on the grill and the stove. I may be able to find some of that big doe I shot with the 38-55 last fall down in the freezer. I hope that we all will be praying that our God will bless this nation a little longer.

I have a concert to play (euphonium) in the evening....there will be food, drink before, and fireworks after....no need to lift a finger (well, except for the horn)....

Dang Blaine, I didn't know you were a horn man. I used to play bass horn. Have marched more miles than I like to think about with a Sousaphone. High School, College and Army Signal School bands. Finally gave my baritone to a nephew a year or so ago. Still toot my 1911 Conn big bore cornet.

And here I am... stuck driving across the northern tier states to SHYCAGO!!! Still trying to decide if I wanna go via North or South Dakota!!!

What's for dinner at your house on the Fourth?
I like his rub, but instead of olive oil to bind it, for a little more tang I use yellow mustard. Also, I like to inject with a mix of slightly salted apple cider vinegar, orange juice and Tabasco.
Once it's smoked pretty much like his, I don't use foil. I put it in an oven bag and finish it inside in the oven in a pan that it will be pulled on. The bag catches all the juices.

Nate, last butt I did I used fancy rubs and injections. I am looking forward to trying Aaron's simple salt and pepper approach. I put up a batch of his simple BBQ sauce yesterday, and it's pretty good stuff.

Nate Kiowa Jones was an old Texas Ranger there at turn of the century. That's a picture of him. This was a time when the west was taming down and the rangers were having to be more formal as in wearing ties and white shirts and such. Doing much more paper work than before and he hated it. Story goes he was filling out the transfer papers, for the first time, for a prisoner that he had just delivered to the state prison in Huntsville and when he got to the question Disposition of the inmate, Jones thought it meant what kinda attitude did the prisoner have and so he wrote, "He was ornery, and that’s why I shot him".
I said,” Sounds like my kinda guy.” when I had heard this story, but I finally got to the Texas Ranger Hall of Fame in Waco and talked to the researcher there and she confirmed it. She found the paper work and made copies of it for me.

Have the wife's family annual get together over on Whidbey Island. Pot luck. We're bringing the usual Kahlua pork and strawberry shortcake. Might make a batch of my mom's sweet pickle potato salad also.

That's a great story Steve. I've been to the Ranger museum on visits to my daughter while she attending Baylor. Neat place. Nate sounds like the pure quill, and I'll bet he knew how to run that Model 1895.

Wow, you guys really know how to cook pork butt! I am going to have to try that. Maybe even this weekend. Right now I have a tri-tip marinating that I will slow cook in the smoker tomorrow. -Tutt
