Billy, I'm an absolute charcuterie nut. I've eaten my own weight in salty nitrate and nitrite laden meats many times over. Literally tons of the stuff. So it is a little late for me....the damage is done.

But for those who have not yet mummified themselves in pink salt, try corning your own brisket in just plain salty water and in old bay boil mix or your favorite pickling spices without the unhealthy preservatives. A week in the fridge is enough but two weeks are better.

Not much on corned beef , but when I went to the grocery store today I did get a six pack of Guinness Stout :wink:

Saw on a cooking show, corned beef's not Irish. Some say its from a jewish deli in ny.

I like to cook my corned beef in the smoker. Smoked corned beef hash----Mmmmm

I never have cared much for corned beef. The cabbage part is great though. Mix it with mashed taters and both get better.

Today being St. Paddy's day I might opt for some Sheppard's pie or fish n chips.

I'm not a fan of corned beef but I'll eat pastrami like a ravenous dog. Smoked brisket is fine eating too.
They say you eat with your eyes- so maybe seeing a hunk of fat laden unusually colored meat bubbling away is what I dont care for.

I use as lean a flat cut brisket as I can find, and only do corned beef once a year. But Ray's suggestion is a good one -- corning a brisket at home. Will try this.
I have also heard the Irish took their cue from watching Jewish neighbors corn brisket for pastrami.

I had a Black n Tan for St Patties ! No corned beef just beef burgers :wink:

Late report: No corned beef - no beef at all, but venison!

Wife cooked two small roasts from Troupe's buck and it was perfect! No further seasoning (salt, pepper, etc) required.
I tried some horseradish sauce on the plate, but all it did was cover up the delicate flavor of the venison.
I like horseradish on roast beef, but need the real stuff, the sauce is too mild and is made for sissies; might as well spread on bologna sandwiches. :wink:

Venison, salmon, wild pork, and several other choices are as Irish as the Blue Hills of Breffni. Lugh Lamfada, Brian Boru, The Dagda, and The Hound of Cullen were all known as hunters and fishermen. Most people know The Hound of Cullen as CuChulain.

Brian Boru was an Ard Righ, and he kicked the Norsemen's butts for several years. The Irish tendency to fight amongst themselves was his downfall. Too many others wanted to be King, and they acted like the Democratics of today and worked deals with the Devil just to hurt the leader who was fixing things. Eventually, enough of the jealous little minded skunks helped the invading Norsemen that Boru was defeated and killed. This repeated itself when homosexual King James had Strongbow, Robert DeClare, invade Ireland and conquer it for the English Crown. King James then minced around and politically destroyed Strongbow because he was afraid of him.
