Reckon that looks real good Pete, we made a big pot of Chili a couple of days ago. We use a store bought season mix and chili beans and tomatoes. You know what ? I am just waiting the Chili Police to show up, in all these years we have not heard from them. So enjoy it the way you want to!!!!!!!!!! We also use plain old hamburger cause there ain't no deer meat left.

Now, that is a true Texan's question. Here in Texas, I have learned what chili really was really meant to be. My Mother used to use beans and tomatoes in her chili. She grew up in SouthWestern Kansas and the Western slope in Colorado. That might be why her chili is more of a mild soup with beans, meat, tomatoes, and bell peppers instead of a thick spicy meat dish that can be eaten off of a plate. Me, I like it made both ways, as long as the bell peppers are left out. I am allergic to bell peppers. I like chili, serrano, and jalapeno peppers.

For anyone interested in trying it, here's my chili recipe:
Ingredients:
1 lb beef or venison, ground or shredded ......... 1 lb ground pork ..... 1 can Red Kidney Beans .......
1 can Pinto Beans ..... 1 Bell Pepper, seeded & diced ...... 3 Jalapeno's, seeded & diced .....
1 lg/sweet onion, diced .......... 1 can beer (any kind)........ 4 Cups Beef Broth ...... 1 lg Carrot, fine dice ........
1 Celery stalk, fine dice ... 2 Bay Leaves ..... 4 Tbsp Chili powder ....1 Tbsp Oregano ... 1 Tsp Salt ......
2 Tsp Black Pepper, 1/2 Tsp dry Red Pepper flakes ...... 1 can whole peeled tomatoes, drained & halved
1 Tbsp Corn Starch .... Cooking oil as req'd
On stovetop or cooking coals:
* Brown meat in chili pot, in small batches, remove & reserve.
* Add diced carrot, onion, celery & Jalapeno's to chili pot & cook until soft.
* Return meat to cooking pot & stir in diced Bell Pepper, Beef Broth & Beer
* Stir in all seasoning: Chili Powder, Oregano, Salt/Pepper, Red Pepper flakes, & Bay Leaves
* Add drained beans, stirring into pot
* Add halved whole peeled tomatoes to pot (optional)
* Bring chili to a boil, thicken if desired, then reduce heat to simmer for 2 hours, stirring occasionally.
To thicken chili: Remove 1 Cup of liquid from chili pot & stir gradually into 1 Tbsp Corn Starch, then stir resulting roux into chili.

My wife made homemade chili one day last week when school was closed for the snow and my daughter was off due to that. Reminded me of living up north; the only part I miss (cold weather comfort food)!
